For 2.2lb (1 kg) cabbage (chopped):
0.7oz (20 g) salt;
1 medium carrot (grated);
some caraway, cow-berry or small cranberry
Mix all ingredients and put into glass jars (5-litter jars preferable) closely. Put above one cabbage leaf and piece of cloth. Put heavy load (about 4.4lb (2 kg) - bottle with water, etc.) above cloth. Keep 7 days in hot place. Spit the cabbage 1-2 times during fermentation.
