Pirogi (Pies)


Dough: 3 1/2 cups flour; 4-8 tbsp. sugar; 2-4 tbsp. butter; 3 eggs; 0,35-0,53ozs (10-15g) yeast; 1/2 cup milk or water; 1/2 tsp. salt.
Put the yeast into warm milk/water. Add a little sugar and 1 1/2 cups of flour. Wait before volume of mixture increase in 2-3 times. Put some sugar, salt, eggs, flour, oil into dough and mix. Cover the bowl with a cloth and put it in a warm place for 2-3 hours. The volume of dough should increase in 2 times.
Stuffings: rice and hard-boiled eggs; green onion and hard-boiled eggs; cabbage; fish and rice; fish and cabbage; force-meat and onion; curd and many others.
Stuffing cook: chop the eggs, onion, cabbage into small pieces. Salt, pepper according to taste.

Make small dough balls and roll them. Put the stuffings on the dough. Join the edges of the dough. Smear a pirog with melted butter/unboiled egg. Bake for about 15 minutes in a hot oven. Enjoy your pirogi.
