Strawberry varenie (strawberry jam) - upper right


2.2lb (1 kg) strawberry;
2.2lb (1 kg) sugar;
0,5 cup water
Cook the sugar syrup (boil water and sugar). Put strawberries into hot syrup, and then get cool. Boil for 2 minutes, then take the scum off and get cool (for 2-3 hours). Boil for 5 minutes, then take the scum off and get cool (for 2-3 hours). Boil until ready (until drop of mixture doesn't strike on the plate). Put varenie into sterilized jam pots and cover hermetically for safe-keeping.

Apricot varenie (apricot jam) - lower left


2.2lb (1 kg) apricots;
2.2lb (1 kg) sugar
Apricots cut in half. Remove kernels, then shell the kernels. Put apricots, shelled kernels into pan and pour sugar. Keep into cool place for 6-10 hours. Cook like Strawberry varenie (see above).

Cherry varenie (cherry jam) - lower right


2.2lb (1 kg) cherries;
2.2lb (1 kg) sugar;
0,5 cup water
Remove kernels from cherries. Cook like Strawberry varenie (see above).

Black currant varenie (black currant jam) - upper left


5 cups black currants;
7 cups sugar;
2 cups water
Cook the sugar syrup (boil water and sugar). Put black currants into hot syrup. Boil for 5 minutes. Put varenie into sterilized jam pots and cover hermetically for safe-keeping.
